Recipe: Coca-Cola Brownies

There I was staring into my empty cabinet and my options included a box of noodles and some Duncan Hines brownie mix. Which reminded me of a recipe I saw on Pinterest, diet coke brownies. So I figured why not:

Better yet, let’s call these Lazy Brownies

Recipe:

You  need:

12 oz Can of Diet Coke (I used regular coke because I am not a fan of diet)
1 box of Duncan Hines Brownie mix

Directions:

Pour entire can of Coke and brownie mix into large bowl. Stir until fully mixed. Spray pan with cooking spray. Poor brownie batter into baking pan.  Refer to that back of Duncan Hines box for cook times.

I was shocked that these brownies came out moist and spongy. It was a pleasant surprise. They were a little on the sweet side, but the top caramelized which good and caused a small crunch. This makes me wonder what this would have tasted like if I had used Cherry Coke, or Orange Crush? Maybe next time!

**UPDATE** I figured out why this recipe calls for diet Coke. The brownies I made are STICKY! The tendency of this delectable treat to stay with you, literally, does not take away from the overall effectiveness and ease of the recipe. However, I wouldn’t serve brownies made with a Coca-Cola Classic (as apposed to its less sticky sibling diet coke) to anyone you were trying to impress, or someone wearing white. This is a classic lesson of following directions for the best results. Good Luck and Happy Baking!
